METHODFry the onions in the oil until light golden brown, then add all the other vegetables and cook gently for a couple of minutes. Cover the vegetables with water. Add the herbs, chicken stock cube and seasoning and bring to the boil, then add the oats and turkey or chicken wings. Cook for about 30 minutes (or for 15 minutes in a pressure cooker). Cool slightly, then discard the poultry skin and bones and most of the herbs. Puree the soup in a blender, return to the pan and reheat gently. Serves 4 |
