"This is good topped with large toasted slices of French bread which have been covered with grated Gruyere cheese and grilled until golden."

• 8 medium onions
• 2 oz/50 g butter
• 1 tbsp olive oil
• 1 tsp mustard, to taste
• Salt and freshly ground black pepper
• 3 cans of consomme soup
• 8 fl oz/225 ml white wine

METHOD

In a pan, fry the onions in the butter and olive oil until golden. Add the mustard, salt and pepper, then stir in the consomme and simmer for 1 hour. Stir in the white wine a few minutes before the end and serve hot.

Serves 4 to 6
